The reason that "draft beer" served at restaurants is said to be delicious is because it barely comes into contact with air from the brewing process until it is poured into the glass. There are two main reasons for the deterioration of flavor: temperature changes due to the influence of the outside air, and oxidation that occurs when the beer comes into contact with air. If you drink it directly from a bottle or can to prevent oxidation, the beer will be more carbonated than necessary, and the tingling sensation will overwhelm the mellowness, richness, and sweetness.

To enjoy bottled or canned beer at home more deliciously, always pour it into a mug or glass. By gently pouring moderately chilled beer without foaming it, the beer will generate carbonation and create fine bubbles. This foam acts as a lid to prevent the release of aroma and oxidation. Protected from oxidation, this state in which the beer releases the right amount of carbonation creates the perfect balance of sharp bitterness and rich sweetness.

However, out of all the materials, bamboo achieved high values ​​for both heat retention and strength. Bamboo is said to be a grass, not a type of wood. Unlike trees, bamboo is made up of the same straw-like tubes called xylems as grass and leaves, which are bundled together in a straight line. The xylems, which are regularly bundled on a microscopic level, contain just the right amount of air, yet are more than twice as strong as regular wood. This is where RIVERET began developing a bamboo container specifically for beer.

When you look at a cross section of bamboo, you can see that it is composed of countless straw-like vessels. The tiny spaces contained within these vessels create layers of air that increase the warmth inside, just like a down jacket.

Another challenge was how to delay oxidation. The shape of the vessel into which the beer is poured is important in maintaining the optimal balance of taste and aroma for as long as possible. RIVERET paid particular attention to the interior surface treatment and unique shape lines. By shrinking the area near the opening, the aroma is trapped and oxidation is prevented. The slope is steeper near the center of the interior, encouraging the remaining bubbles to drop further and further down, designed to maintain the cap of bubbles as long as possible.

The inclined interior and hand polishing create a mechanism that allows the foam to flow downwards without adhering to the sides or stagnating.

The finer the foam, the longer it will last. If the surface of the vessel is too rough, the bubbles will be crushed and will combine to form larger bubbles, which will make them more likely to break. In the final stage of the RIVERET manufacturing process, the vessel is finely polished by hand by a craftsman. This delicate technique preserves as much of the fine foam produced by the beer as possible, while promoting just the right amount of foaming.
